Apple Cinnamon Spelt Muffins
2 cups Sartaj Whole Grain Spelt Flour
1 1/2 apples cored and shredded
2 1/2 tsp cinnamon (or to taste)
1 tblsp vanilla extract
1 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 cup butter
1 1/2 cups water
1/2 cup raisins (optional)
Preheat oven to 350 degrees F (175 degrees C).
Place water, butter, apples, sugar, cinnamon and vanilla extract in pot and let simmer on medium heat for 5 minutes or until water has slightly reduced.
While simmering, put the remaining ingredients in a bowl. Once the apple mixture is ready, mix into the flour mixture.
Dough will be slightly thick and sticky. Divide the mixture into a muffin pan and bake for 30 - 35 minutes.
Let cool and enjoy!
