Lemon Poppy Seed Muffins

1 1/2 cups Sartaj Whole Grain Soft White Flour
1/2 cup butter, softened
3/4 cup sugar
Juice of 1 lemon
1 tsp freshly grated lemon rind
1 tsp vanilla
1 1/8 tsp. baking powder
1/4 tsp salt
1/2 tsp soda
3/4 cup buttermilk
2 1/2 tbsp poppy seeds

Preheat oven to 350 degrees F (175 degrees C).

Cream the butter; add the sugar and beat until light and fluffy.

Beat in rind, lemon juice and vanilla.

Sift together the flour, baking powder, salt and the soda.

Add the mixture to the butter mixture alternately with the buttermilk. Blend until it is just combined. Fold in poppy seeds.

Fill muffin tins 3/4 full. Bake for 20-25 minutes or until springy to touch.
