Whole Wheat, Whole Grain Carrot Cake

1 3/4 cups Sartaj Whole Wheat Flour
3 cups grated carrots
2 cups brown sugar, packed
2 tsp. Baking Soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1 tsp. salt
1 cup vegetable oil
4 eggs
1 tsp. vanilla

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine Sartaj Whole Wheat Flour, baking soda, brown sugar, cinnamon, nutmeg, cloves and salt. Mix. Blend in oil. Add one egg at a time and beat well after each egg is added. Mix in carrots and vanilla.

Put onto 2 greased 9” pans.

Bake 35 to 40 minutes, until a toothpick inserted into center of the cake comes out clean.

Let cool in pan for 10 minutes, then turn out onto a wire rack.
