Whole Wheat Banana Bread

1 3/4 cups Sartaj Whole Grain Hard Red Flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter, soft
1 cup white sugar
2 eggs beaten
1 1/2 cups mashed bananas
1 cup walnuts and/or pecans (optional)

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine Whole Wheat Sartaj Flour, baking soda, baking powder and salt. In a separate bowl, cream together butter and sugar.

Stir in eggs and mashed bananas until well blended. Add banana mixture into flour mixture; stir just to moisten.

Pour batter into ungreased loaf pan (5 x 9 x 3 inches).

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean.

Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

For another healthy alternative:

Spelt Banana Bread

1 cup Sartaj Whole Grain Spelt Flour
1/2 cup soft white flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 cup chopped pecans (optional)
3 ripe bananas, mashed
3/4 cup sugar
1/4 cup butter or vegetable oil

Preheat over to 350 degrees.

Combine bananas, sugar and butter in a large bowl.

Combine remaining ingredients in another bowl.

Add dry ingredients and stir until combined.

Pour into greased loaf pan and bake for 45 minutes.

Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
